Brazilian chicken

I’ve been finding more and more recently that if I engage my preschooler in cooking meals, he is far more likely to both eat it and try foods he wouldn’t otherwise. So I’m trying to think of easy-ish meals that he can do that will expand his repertoire of foods! For our Brazil week, I thought some good old Brazilian chicken would be a good one to try.

You will need –

2 red onions

2 red peppers

mini chicken fillets

cherry tomatoes

cayenne pepper, garlic salt, parsley, pepper

To make it –

Slice up the onions and the peppers and fry them for a few minutes until soft on a high heat. Then add in the chicken fillets and stir them around until they are brown all over. Turn the heat slightly lower to medium and leave the chicken and vegetables to cook, turning regularly to make sure nothing burns and the chicken gets an even cook. After 10 minutes or once the chicken is cooked, add in the cherry tomatoes, chopped in half and the seasoning – as much as you feel looks good (we weren’t very scientific on that point, partly because my preschooler was in charge of the seasoning!). We served on a bed of rice.

And it was a huge success!
