Brazilian maize cookies

For Brazil week, I was looking for a recipe that I could use with just my toddler and I came across this recipe for cornflour cookies. It was absolutely perfect – very easy and quick, and delicious too!

My toddler (19mo) loved using the food processor (and probably blended our ingredients more than strictly necessary, but hey ho!). He did a very good job of licking out the bowl. And when they were done, he was telling everyone that they were his biscuits and he was so proud. It was such a good recipe for a first solo introduction to baking (i.e. without older brother, I was a heavy helping hand!), and the cookies are absolutely delicious.
