Egg-fried rice for China week

Egg-fried rice is an absolute classic and we had to make it for our ‘China week’. This was one of the first evening meals that my preschooler made almost entirely by himself (with some guidance!). He ate every last scleric – I think because he’d made it himself.

For this you will need – 2/3 carrots, a small bunch of spring onions, 2 eggs, 200g basmati rice, soy sauce, vegetable oil and frozen vegetables. First, peel and chop the carrots – it doesnt matter if they don’t look beautiful or are still quite chunky! Same for the spring onions. Then fry them in a frying pan with some oil. At the same time cook some rice. When the rice is almost done, add a handful of frozen vegetables to the same saucepan. Once the carrots and spring onions are nicely fried, add a couple of teaspoons of soy sauce, and mix in a beaten egg. Cook for 2 minutes and then add the cooked rice and vegetable mix. Give it a good stir and season with pepper.

My 4yo loved making this. We weren’t too accurate with measuring things, just put in what looked right – there was enough for 2 adults and 2 children. I’m sure he wouldn’t have been so enthusiastic if I had made it!
